    Ingredients

    • 4 John Dory fillets
    • 4 slices of Parma ham
    • 4 sage leaves
    • 1 tablespoon of olive oil
    • Salt and pepper to taste

    Method

    • Step-by-Step Method for John Dory with Parma Ham and Sage
    • Preheat oven to 200°C (390°F) or set a non-stick pan over medium-high heat
    • Pat John Dory fillets dry with kitchen paper
    • Lightly season both sides of the fillets with salt and pepper
    • Place one sage leaf on top of each fillet
    • Lay a slice of Parma ham over each fillet, wrapping or gently pressing to adhere
    • Drizzle half of the olive oil in a non-stick pan and heat over medium-high
    • Place the fillets Parma ham side down in the pan
    • Sear for 2 minutes or until the ham is crisp and golden
    • Flip the fillets carefully, add remaining olive oil if needed
    • Sear the other side for 1–2 minutes to gently cook the fish through
    • Optional: Transfer pan to oven for 2–3 minutes for thicker fillets to finish cooking evenly
    • Remove from heat and let rest for 1 minute
    • Plate each fillet ham-side up on a warm plate
    • Suggest serving with a wedge of lemon (optional, not in ingredient list) and/or a simple green salad
    • Serve immediately for optimal crispness and aroma
