    • 4 John Dory fillets
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • 2 tablespoons chopped fresh parsley
    • Salt and pepper, to taste
    • 1 tablespoon lemon juice
    • 2 tablespoons olive oil

    Method

    • Pat John Dory fillets dry with kitchen paper to prepare for cooking
    • Season both sides of the fillets with salt and pepper
    • Mince garlic cloves and finely chop fresh parsley; set aside each separately
    • In a small bowl, combine butter with chopped parsley and minced garlic, mixing until evenly blended
    • Squeeze lemon juice and set aside for finishing the dish
    • Heat olive oil in a non-stick pan over medium-high heat
    • Once oil shimmers, carefully place John Dory fillets in pan, skin-side down if skin-on
    • Allow fillets to cook undisturbed for 2-3 minutes until lightly golden
    • Flip fillets gently and cook for another 2 minutes, or until fish is opaque and just cooked through
    • Reduce heat to low, add the parsley–garlic butter mixture to the pan, spooning melted butter over the fillets as it foams
    • Drizzle lemon juice over the fish while basting with the flavored butter
    • Once the fish is glazed and the butter aromatic, transfer fillets to warmed plates
    • Pour any remaining pan sauce over the fillets
    • Garnish with a sprinkle of reserved fresh parsley
    • Plate suggestion: Serve each fillet atop a warm plate, keeping the presentation clean and allowing the green of the parsley to contrast with the golden fish
