    Ingredients

    • 4 mackerel fillets
    • 2 tablespoons soy sauce
    • 2 tablespoons mirin 
    • 2 tablespoons sake
    • 2 tablespoons sugar
    • 2 tablespoons vegetable oil 
    • 1 teaspoon grated ginger 
    • 1 teaspoon grated garlic

    Method

    • Step-by-Step Method for Mackerel Teriyaki
    • Pat the mackerel fillets dry with kitchen paper to remove excess moisture
    • In a small bowl, combine soy sauce, mirin, sake, and sugar; stir until sugar dissolves
    • Grate ginger and garlic, measure 1 teaspoon of each; set aside
    • Place mackerel fillets skin-side up on a clean tray or plate
    • Heat half of the vegetable oil in a non-stick frying pan over medium heat
    • When oil shimmers, add mackerel fillets skin-side down; cook 2–3 minutes until skin is crisp
    • Flip fillets gently; cook 2 more minutes until the flesh is just opaque
    • Remove fillets from the pan and keep warm
    • Wipe pan with kitchen paper; add remaining oil
    • Add grated ginger and garlic to the pan; sauté for 30 seconds until aromatic
    • Pour in the soy sauce, mirin, sake, and sugar mixture
    • Simmer the sauce over low heat for 2–3 minutes until slightly thickened
    • Return mackerel fillets to the pan; spoon sauce over fish continuously for 1–2 minutes to glaze
    • Remove fillets and plate immediately
    • Drizzle extra teriyaki sauce over the mackerel
    • Suggested plating: arrange fillets neatly, garnish with fine shreds of ginger or spring onion if desired
    • Suggested serving: serve with steamed rice and lightly blanched green vegetables for balance
