    Ingredients

    • 2 mackerel fillets
    • 2 cucumbers, sliced
    • 2 tablespoons of fresh dill, chopped
    • 1 tablespoon of olive oil
    • 1 tablespoon of lemon juice
    • Salt and pepper to taste

    Method

    • Step-by-Step Method for Mackerel with Cucumber and Dill
    • Pat mackerel fillets dry with paper towels
    • Season both sides of the mackerel fillets with salt and pepper
    • Place a non-stick pan over medium-high heat
    • Add half of the olive oil to the pan and heat until shimmering
    • Lay the mackerel fillets in the pan, skin side down
    • Cook for 3–4 minutes, pressing gently to keep skin flat, until skin is crisp
    • Flip fillets and cook the other side for 1–2 minutes, until just cooked through
    • Remove mackerel from the pan and rest on a plate
    • While fish is cooking, slice cucumbers thinly into rounds
    • In a bowl, toss sliced cucumber with lemon juice, remaining olive oil, most of the chopped dill, and salt & pepper to taste
    • Arrange the cucumber salad evenly on serving plates
    • Place the warm mackerel fillets on top of the cucumber salad
    • Garnish with remaining fresh dill
    • Serve immediately
