    • 1 whole mackerel, cleaned and scaled
    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 1 teaspoon grated fresh ginger
    • 1 teaspoon sugar
    • 2 cloves garlic, minced
    • 2 tablespoons mirin
    • 1 tablespoon sesame seeds
    • Salt and pepper, to taste

    Method

    • How to Make Mackerel with Soy and Sesame
    • Prepare the marinade by combining soy sauce, sesame oil, grated ginger, sugar, minced garlic, and mirin in a bowl
    • Stir the marinade mixture well until the sugar dissolves completely
    • Place the cleaned and scaled whole mackerel on a plate or in a shallow dish
    • Season the mackerel lightly with salt and pepper, inside and out
    • Pour the marinade evenly over the mackerel, ensuring it is fully coated
    • Let the mackerel marinate for at least 20 minutes in the refrigerator
    • Preheat the oven to 200°C (390°F) or prepare a grill to medium-high heat
    • While the fish marinates, toast the sesame seeds in a dry pan over medium heat until golden and fragrant, then set aside
    • Remove the mackerel from the marinade, reserving excess marinade for basting
    • Place the mackerel on a lined baking sheet if roasting, or on a lightly oiled grill
    • Cook the mackerel for 12-15 minutes, basting with reserved marinade occasionally, until the flesh is opaque and flakes easily
    • Transfer the cooked mackerel to a serving platter
    • Drizzle any remaining marinade (bring to a boil first if desired for safety) over the fish for added flavor
    • Sprinkle with toasted sesame seeds before serving
    • For plating, garnish with extra grated ginger or finely sliced green onion if available for color and freshness
