    Ingredients

    • 2 mackerel fillets
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 large tomato, diced
    • 1/4 cup fresh basil, chopped
    • Salt and pepper to taste

    Method

    • Step-by-Step Method: Mackerel with Tomato and Basil
    • Pat mackerel fillets dry with paper towels
    • Season both sides of each fillet lightly with salt and pepper
    • Heat 1 tablespoon of olive oil in a skillet over medium-high heat
    • When oil is shimmering, gently place mackerel fillets skin-side down in the pan
    • Cook fillets for 2-3 minutes until skin is crisp and lightly golden
    • Flip fillets and cook an additional 1-2 minutes on the other side, then remove fillets and set aside
    • Add remaining 1 tablespoon olive oil to the same skillet
    • Add minced garlic to the pan and sauté for 30 seconds until fragrant
    • Add diced tomato to the skillet and cook for 2-3 minutes, stirring gently until tomatoes begin to soften
    • Remove pan from heat and stir in chopped fresh basil
    • Adjust seasoning to taste with additional salt and pepper if needed
    • Place mackerel fillets atop the tomato and basil mixture for serving
    • Spoon any pan juices and extra tomatoes over the fish
    • For plating, arrange fillets skin-side up over the tomato-basil base for color contrast
    • Serve immediately, optionally garnishing with a few extra basil leaves
