    • 1 lb monkfish fillets
    • 1/4 cup olive oil
    • 2 cloves garlic, minced
    • 1 teaspoon ground cumin
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon cayenne pepper
    • 1/2 teaspoon sea salt
    • 1/4 cup fresh cilantro, chopped
    • Juice of 1 lime
    • 1/4 cup fresh parsley, chopped
    • 1/2 teaspoon freshly ground black pepper

    Method

    • Step-by-Step Method: Monkfish with Cilantro and Lime
    • Pat monkfish fillets dry using paper towels
    • Cut monkfish into evenly sized portions for uniform cooking
    • In a small bowl, mix olive oil, minced garlic, ground cumin, smoked paprika, cayenne pepper, sea salt, and black pepper to form a marinade
    • Set aside a small portion of chopped cilantro and chopped parsley for garnish
    • Add most of the chopped cilantro and all of the chopped parsley to the marinade, reserving the rest for later
    • Squeeze the juice of 1 lime into the marinade and stir to combine
    • Place monkfish portions in a shallow dish or sealable bag
    • Pour marinade over monkfish, ensuring all pieces are evenly coated
    • Marinate monkfish in the refrigerator for at least 30 minutes, up to 1 hour
    • While the fish marinates, preheat oven to 400°F (200°C)
    • Line a baking tray with parchment paper or lightly oil the tray to prevent sticking
    • Remove monkfish from marinade, letting excess drip off
    • Place monkfish pieces on prepared baking tray with space between each piece
    • Bake monkfish in preheated oven for 12–15 minutes, or until just opaque and firm to the touch
    • Optional: For a deeper color, broil for the last 2 minutes of cooking
    • Remove from oven and rest for 2–3 minutes
    • Plate monkfish portions, spooning pan juices over the top
    • Garnish with reserved chopped cilantro and parsley
    • Serve immediately with lime wedges on the side
