    Ingredients

    • 1 lb monkfish fillet
    • 1/4 cup white wine
    • 2 tablespoons capers
    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried thyme
    • Salt and pepper to taste
    • 2 tablespoons chopped fresh parsley

    Method

    • Pat the monkfish fillet dry with paper towels
    • Cut the monkfish into even-sized pieces or leave whole as desired
    • Season the monkfish on all sides with salt and pepper
    • Peel and finely mince the garlic cloves
    • Chop the fresh parsley and set aside
    • In a small bowl, combine dried oregano and dried thyme
    • In a large non-stick or heavy skillet, add the olive oil
    • Heat the olive oil over medium-high heat until shimmering
    • Add the monkfish fillet to the hot pan
    • Sear the monkfish for 2-3 minutes per side, until lightly golden
    • Remove the monkfish to a plate and set aside
    • Lower the heat to medium
    • Add minced garlic to the pan and sauté for 30 seconds until fragrant
    • Pour in the white wine, scraping up any browned bits
    • Stir in capers, dried oregano, and dried thyme
    • Simmer gently for 2-3 minutes to slightly reduce the sauce
    • Return the monkfish to the pan and spoon sauce over the top
    • Cover and cook for 3-5 minutes, or until the monkfish is opaque and just cooked through
    • Taste and adjust seasoning with salt and pepper if needed
    • Transfer monkfish onto serving plates and spoon sauce over
    • Scatter the chopped parsley on top as garnish
    • Serve immediately, pairing with a light salad or steamed vegetables if desired
