    Ingredients

    • 2 pounds gutted and descaled whole sardines
    • 1/4 cup rock salt
    • 1 tablespoon olive oil
    • salt and ground pepper to taste
    • Garnishes: fresh lemon wedges and cumin

    Method

    • Preheat oven to 220°C (430°F)
    • Rinse gutted and descaled whole sardines under cold water
    • Pat sardines dry with clean paper towels
    • Place sardines on a large plate or tray
    • Sprinkle rock salt generously over both sides of the sardines
    • Let the salted sardines rest for 10 minutes to enhance flavor and draw out surface moisture
    • Discard excess surface salt by gently brushing it off
    • Arrange sardines in a single layer on a lightly oiled baking tray or ovenproof dish
    • Drizzle olive oil evenly over sardines
    • Season lightly with salt and freshly ground black pepper to taste
    • Transfer tray to the middle rack of the preheated oven
    • Bake for 12–15 minutes until sardines are just cooked through and the skin starts to crisp
    • Remove from oven and let rest for 2 minutes
    • Plate sardines whole on a serving platter
    • Garnish generously with fresh lemon wedges and a sprinkle of ground cumin
    • Serve immediately, encouraging diners to squeeze lemon over the fish
    • Suggest serving with warm, crusty bread or a simple chopped salad on the side for a complete meal
