    Mussels with Bacon and Leeks is a delicious and easy seafood dish full of flavour. It is a great way to make a simple meal for a family or a dinner party. Combining bacon, garlic, leeks, and white wine makes for a flavourful and comforting meal. This dish can be served with a side of crusty bread or over a bed of rice.

    Ingredients

    • 2 pounds mussels, scrubbed and debearded
    • 4 slices bacon, diced
    • 2 cloves garlic, minced
    • 1 leek, thinly sliced
    • 1/2 cup white wine
    • 2 tablespoons butter
    • 2 tablespoons chopped fresh parsley
    • Salt and pepper to taste

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Serve with crusty bread or over a bed of rice.
