    Ingredients

    • 2 pounds mussels, scrubbed and debearded
    • 4 slices bacon, diced
    • 2 cloves garlic, minced
    • 1 leek, thinly sliced
    • 1/2 cup white wine
    • 2 tablespoons butter
    • 2 tablespoons chopped fresh parsley
    • Salt and pepper to taste

    Method

    • To prepare the dish, start by heating a large skillet over medium-high heat. 
    • Add the bacon and cook until it is crispy about 5 minutes. 
    • Add the garlic and leeks and cook until the leeks are softened about 3 minutes. 
    • Add the white wine and bring to a simmer. 
    • Add the mussels and cover the pan. Cook until the mussels open, about 5 minutes. Discard any mussels that do not open. 
    • Add the butter and parsley and season with salt and pepper to taste. 
    • Serve with crusty bread or over a bed of rice.
