    Ingredients

    • 2 lbs mussels, scrubbed and debearded
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1/2 cup dry white wine
    • 2 cups diced tomatoes
    • 1/4 cup chopped fresh basil
    • Salt and freshly ground black pepper, to taste

    Method

    • Begin by preparing the mussels. Scrub and debeard them, then set aside. 
    • Heat the olive oil in a large pot over medium-high heat. 
    • Add the garlic and tomatoes, and sauté for a few minutes until the garlic is fragrant and the tomatoes are softened. 
    • Pour in the white wine and bring the mixture to a simmer. 
    • Add the mussels, cover the pot, and cook for 5-7 minutes, until the mussels have opened. 
    • Discard any mussels that do not open. 
    • Add the chopped basil, season with salt and pepper to taste, and serve.
