    Ingredients

    • 2 lbs octopus, cleaned and cut into small pieces
    • 2 tablespoons extra-virgin olive oil
    • 2 cloves garlic, minced
    • 2 tablespoons freshly squeezed lemon juice
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon freshly ground black pepper
    • 2 bunches fresh spinach, washed and chopped
    • 2 tablespoons capers
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh oregano
    • 2 tablespoons chopped fresh basil
    • 2 tablespoons chopped fresh dill
    • 1/4 cup crumbled feta cheese
    • 2 tablespoons toasted pine nuts

    Method

    • 1. In a bowl, combine the olive oil, garlic, lemon juice, salt, and pepper.
    • 2. Add the octopus pieces and marinate for 30 minutes.
    • 3. Wash and chop the spinach.
    • 4. In a separate bowl, combine the capers, herbs, and feta cheese.
    • 5. Add the toasted pine nuts.
    • 6. In a large bowl, combine the octopus, spinach, and caper mixture.
    • 7. Toss everything together and serve.
