    • 2 tablespoons of vegetable oil

    • 1 teaspoon of ground cumin
    • 1 teaspoon of ground coriander
    • 1/2 teaspoon of turmeric
    • 1/4 teaspoon of cayenne pepper
    • 2 cups of chopped tomatoes
    • 1/2 cup of coconut milk
    • 2 cups of vegetable broth
    • 1/2 pound of octopus, cut into 1/2-inch pieces
    • 1/4 cup of chopped fresh cilantro
    • Salt and pepper, to taste

    Method

    • Chop the onion and mince the garlic
    • Grate the ginger
    • Cut the octopus into 1/2-inch pieces
    • Chop fresh cilantro and set aside for garnish
    • Heat the vegetable oil in a large pan over medium heat
    • Add the chopped onion to the pan and sauté until translucent
    • Add the minced garlic and grated ginger; stir and cook until fragrant
    • Sprinkle in the cumin, coriander, turmeric, and cayenne pepper; stir to toast the spices for 1 minute
    • Add the chopped tomatoes to the pan, stirring to combine
    • Pour in the coconut milk and vegetable broth; stir to form a curry base
    • Season with salt and pepper to taste
    • Bring the curry base to a gentle simmer
    • In parallel, quickly rinse the octopus pieces under cold water and pat dry
