    • 4 salmon fillets
    • 35 g chopped cranberries
    • 30 g breadcrumbs
    • 2 orange zests
    • 3 tbsp olive oil
    • 1 Seasoning

    Method

    • Preheat oven to 200°C (180°C fan) or 400°F
    • Pat salmon fillets dry with kitchen paper and lightly season with salt and pepper
    • Place chopped cranberries, breadcrumbs, and orange zest in a bowl and mix to combine evenly
    • Drizzle 1 tablespoon of olive oil into the cranberry breadcrumb mixture and mix until it just holds together
    • Line a baking tray with parchment paper or lightly brush with olive oil
    • Arrange salmon fillets on the prepared baking tray, skin-side down if applicable
    • Brush tops of salmon fillets with 2 tablespoons of olive oil to help crust adhere
    • Press the cranberry and orange breadcrumb mixture evenly on top of each fillet, forming a crust layer
    • Bake in the preheated oven for 12–15 minutes, or until salmon is just cooked through and crust is golden
    • Remove salmon from oven and let rest for 2 minutes before serving
    • For plating, place each salmon fillet on a warm plate, garnish with fresh orange zest if desired, and drizzle a small amount of remaining olive oil around the fillet for shine
    • Serve with a simple green salad, steamed vegetables, or citrus segments for a refreshing accompaniment
