    Ingredients

    • 1/2 cup butter
    • 2 tablespoons all-purpose flour
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 teaspoon celery seed
    • 1/4 teaspoon paprika
    • 1/4 teaspoon dry mustard
    • 1/4 teaspoon Worcestershire sauce
    • 2 cups half-and-half
    • 2 cups oysters, drained
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup cracker crumbs
    • 1/4 cup chopped green onion
    • 1/4 cup chopped red pepper
    • 1/4 cup chopped celery
    • 1/4 cup chopped parsley
    • 1 unbaked 9-inch pie shell

    Method

    • To begin, preheat your oven to 350 degrees F.
    • Melt the butter over low heat in a medium saucepan and whisk in the flour, salt, pepper, celery seed, paprika, dry mustard, and Worcestershire sauce. Cook for a few minutes, stirring constantly, until the mixture is bubbly and thickened.
    • Add the half-and-half and bring to a boil, stirring constantly. Reduce the heat and simmer for a few minutes, stirring occasionally.
    • Remove the saucepan from the heat and stir in the oysters, Parmesan cheese, cracker crumbs, green onion, red pepper, celery, and parsley.
    • Pour the mixture into the unbaked pie shell and bake for about an hour, or until the top is golden brown and the filling is set.
