    Ingredients

    • 1/2 cup butter
    • 1/4 cup finely chopped onion
    • 2 cloves garlic, minced
    • 2 tablespoons chopped parsley
    • 1/4 cup all-purpose flour
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1/2 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup cooked, chopped spinach
    • 1/2 cup cooked, chopped oysters
    • 2 tablespoons dry sherry
    • 1/4 teaspoon Worcestershire sauce
    • 1/4 teaspoon hot pepper sauce
    • Crackers or toast points, for serving

    Method

    • Step-by-Step Method: Oyster Rockefeller Dip
    • Preheat oven to 375°F (190°C)
    • Melt 1/2 cup butter in a large skillet over medium heat
    • Add 1/4 cup finely chopped onion to skillet and sauté until softened, about 2-3 minutes
    • Add 2 cloves minced garlic to skillet and cook for 1 minute until fragrant
    • Stir in 2 tablespoons chopped parsley, cooking for 30 seconds to release aroma
    • Sprinkle 1/4 cup all-purpose flour over the mixture and stir continuously to form a roux, cooking for 1-2 minutes until flour loses raw smell
    • Add 1/2 teaspoon salt and 1/4 teaspoon ground black pepper, mixing well
    • Gradually add 1/2 cup heavy cream to the roux, stirring constantly until fully incorporated and thickened
    • Stir in 1/2 cup grated Parmesan cheese until mixture is smooth and creamy
    • Separately, combine 1/2 cup cooked, chopped spinach and 1/2 cup cooked, chopped oysters in a bowl
    • Add 2 tablespoons dry sherry, 1/4 teaspoon Worcestershire sauce, and 1/4 teaspoon hot pepper sauce to the bowl, mixing gently to combine
    • Fold the spinach and oyster mixture into the prepared cheese sauce, stirring until evenly distributed
    • Transfer dip mixture to a small ovenproof baking dish, smoothing the top
    • Bake for 12-15 minutes until the top is lightly golden and the dip is bubbling
    • Remove from oven and let cool slightly for 3-5 minutes
    • Serve the dip warm with crackers or toast points
    • Optional: Garnish with additional chopped parsley or a light sprinkle of grated Parmesan before serving
