    • 2 tablespoons minced fresh parsley
    • 2 tablespoons minced fresh chives

    Method

    • Check that oysters are fresh and shucked, reserving their liquor in a small bowl
    • Strain the oyster liquor through a fine mesh sieve to remove any grit
    • In a medium saucepan, melt butter gently over medium-low heat
    • Add flour to melted butter, whisking continuously to form a smooth roux
    • Cook the roux, whisking constantly, until just beginning to turn pale golden, about 1–2 minutes
    • Gradually pour in the milk, whisking continuously to prevent lumps
    • Increase heat to medium and bring mixture to a gentle simmer, stirring occasionally
    • Cook until the base thickens and coats the back of a spoon, about 4–5 minutes
    • Add the strained oyster liquor to the thickened milk base and stir well
    • Gently add the oysters to the simmering stew base
    • Poach oysters gently for 2–3 minutes, just until their edges curl and they are plump
    • Stir in Worcestershire sauce and hot sauce
    • Season with salt and pepper to taste
    • Remove the stew from heat
    • Ladle the stew into warmed serving bowls
    • Sprinkle minced parsley and chives over each bowl as garnish
    • Serve immediately, optionally with warm crusty bread or crackers on the side
