    Ingredients

    • Oysters (1 dozen)
    • Bacon (6-8 slices)
    • Worcestershire sauce
    • Butter
    • Tabasco sauce
    • Lemon juice
    • Brown sugar
    • Paprika

    Method

    • How to Make Oysters Kilpatrick
    • Preheat a grill or broiler to high heat
    • Line a baking tray with rock salt or crumpled foil to stabilize oyster shells
    • Cut bacon into very small pieces or fine strips
    • Place bacon pieces in a cold pan and cook over medium heat until just starting to crisp; remove and drain on paper towel
    • In a small saucepan, melt butter gently
    • Add Worcestershire sauce, a splash of Tabasco sauce, a squeeze of lemon juice, and a pinch of brown sugar to the melted butter; stir to combine
    • Shuck the oysters and carefully loosen the meat from the shell, leaving oysters in their half-shells
    • Place oyster shells on the prepared tray, ensuring they are level
    • Spoon a little of the sauce mixture over each oyster
    • Top each oyster with some crisped bacon
    • Sprinkle a light dusting of paprika over each oyster
    • Place the oysters under the hot grill or broiler for 2-3 minutes, until bacon sizzles and edges begin to crisp
    • Remove oysters from grill once sauce is bubbling and bacon is golden
    • Transfer oysters to a serving platter lined with rock salt or seaweed for presentation
    • Garnish with lemon wedges for squeezing
    • Serve immediately while hot
