    Ingredients

    • 1 lb monkfish fillet
    • 2 tablespoons olive oil
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • 1 lemon, juiced
    • 1 tablespoon fresh parsley, chopped
    • Salt and pepper to taste

    Method

    • Begin by seasoning the monkfish fillet with salt and pepper. 
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the monkfish fillet to the skillet and cook for 4-5 minutes per side, until golden brown and cooked through. Remove the monkfish from the skillet and set aside. 
    • In the same skillet, melt the butter and add the garlic. Cook for 1-2 minutes, stirring constantly. 
    • Add the lemon juice and parsley, and cook for an additional minute. 
    • Return the monkfish to the skillet and cook for 1-2 minutes, until the sauce is thick and creamy. Serve immediately.
