    Ingredients

    • 4 (6-ounce) perch fillets
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 2 tablespoons olive oil
    • 1/4 cup prepared pesto
    • 1/4 cup capers, drained
    • 1/4 cup dry white wine
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley leaves

    Method

    • Pat perch fillets dry with paper towels
    • Season fillets on both sides with salt and freshly ground black pepper
    • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat
    • When oil is shimmering, add two perch fillets to the pan, skin or presentation side down
    • Cook fillets without moving until golden (about 2-3 minutes)
    • Flip fillets using a spatula and cook the second side until opaque and just cooked through (about 1-2 minutes more)
    • Transfer cooked fillets to a warmed plate and cover loosely with foil
    • Add remaining 1 tablespoon olive oil to the pan and repeat with remaining fillets
    • Remove all fillets from pan and keep warm
    • Reduce heat to medium, add dry white wine to same skillet, scraping up any browned bits
    • Simmer wine for 1 minute to reduce slightly
    • Stir in prepared pesto, drained capers, and lemon juice, whisking to combine until heated through (about 1 minute)
    • Remove pan from heat and stir in chopped fresh parsley leaves
    • Place perch fillets on serving plates, spoon warm pesto-caper sauce generously over each portion
    • Serve immediately, garnished with extra fresh parsley if desired
    • Plating suggestion: Arrange fillets atop a warm plate, spooning sauce artistically across and around the fish. Consider serving with simply dressed greens or steamed vegetables for color and balance.
