    Ingredients

    • 4 (6-ounce) perch fillets
    • 1/4 cup all-purpose flour
    • Salt and freshly ground black pepper
    • 2 tablespoons olive oil
    • 2 tablespoons butter
    • 1/2 cup dry white wine
    • 2 tablespoons capers
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley

    Method

    • Step-by-Step Method: Perch with White Wine and Capers
    • Pat each perch fillet dry with paper towels
    • Season both sides of the fillets with salt and freshly ground black pepper
    • Place flour on a plate and lightly dredge each fillet, shaking off excess
    • Heat 1 tablespoon olive oil and 1 tablespoon butter in a large nonstick skillet over medium-high heat
    • Once oil is hot and butter is foaming, add two perch fillets to the pan, skin-side down if present
    • Sear undisturbed for 2-3 minutes until golden brown on the first side
    • Flip fillets gently and cook for another 2-3 minutes until just cooked through
    • Transfer cooked fillets to a warm plate and cover loosely with foil
    • Wipe the pan if necessary, add the remaining 1 tablespoon olive oil and 1 tablespoon butter
    • Repeat searing process for remaining two perch fillets, then transfer alongside the others
    • Lower heat to medium, add dry white wine to the pan, scraping up any browned bits
    • Add capers to the wine and simmer for 2 minutes to slightly reduce
    • Stir in freshly squeezed lemon juice
    • Taste sauce and adjust seasoning with salt and pepper if needed
    • Spoon sauce evenly over the plated perch fillets
    • Sprinkle chopped fresh parsley over each fillet just before serving
    • Recommended plating: Arrange perch fillets overlapping slightly on warm plates, drizzle sauce over top, garnish with lemon wedges if desired, and serve immediately
