Preheat the oven to 200 degrees.
Add a melted butter on a baking tray. Then, add the fillets, season with salt and pepper and drizzle the fish with vegetable oil.
Leave the fillets in the oven and cook for 10 minutes, until the fish is cooked through.
While the fish is cooking, prepare the sauce. Add oil to a pan and sautée the garlic, then tomatoes. Add the lemon juice and parsley. Cook the tomatoes until almost down.
If the fillets are ready, take them out out of the oven. Place on a platter, top with the sauce.
Serving Suggestions: Serve with boiled baby potatoes, steamed rice, some green veg, tomatoes, or salad.
