    Ingredients

    • 4 plaice fillets
    • 4 slices of bacon, diced
    • 2 tablespoons butter
    • 1 onion, finely chopped
    • 2 cloves garlic, finely chopped
    • 8 ounces mushrooms, sliced
    • 1/2 cup white wine
    • 1/2 cup chicken stock
    • 1 tablespoon fresh parsley, chopped
    • Salt and pepper to taste

    Method

    • Wash plaice fillets under cold water and pat dry with paper towels
    • Season both sides of the plaice fillets with salt and pepper
    • Dice bacon into small pieces, keeping portions separated
    • Finely chop onion and garlic
    • Slice mushrooms evenly
    • Heat a large skillet over medium heat
    • Add diced bacon to the dry skillet; cook, stirring, until crisp and browned
    • Using a slotted spoon, transfer cooked bacon to a plate; leave rendered fat in the pan
    • Add butter to the pan with bacon fat and melt over medium heat
    • Add onions and sauté until soft and translucent, stirring occasionally
    • Add chopped garlic; sauté until fragrant (about 1 minute)
    • Add sliced mushrooms; cook, stirring, until mushrooms are golden and any moisture evaporates
    • Pour in white wine; scrape any brown bits from the pan bottom and simmer for 2 minutes
    • Add chicken stock and bring to a gentle simmer
    • Reduce heat and allow sauce to reduce and thicken slightly, stirring occasionally
    • While sauce simmers, in a separate nonstick pan, add a touch of butter and heat over medium
    • Gently add seasoned plaice fillets; cook for 1-2 minutes per side until just opaque and flaky
    • Return cooked bacon to sauce, stir gently, and check seasoning
    • Place plaice fillets onto warm serving plates
    • Spoon bacon and mushroom sauce generously over the fillets
    • Sprinkle with fresh chopped parsley before serving
    • Offer with a lemon wedge or lightly steamed greens for a fresh finish
