    Method

    • Step-by-Step Method for Poached Mullet with Tomato-Basil Sauce
    • Bring mullet fillets to room temperature by setting out for 15 minutes
    • Pat mullet fillets dry with paper towel and set aside
    • Pour olive oil into a large skillet or sauté pan and set over medium heat
    • Add chopped onion to the pan and sauté until translucent, about 4 minutes
    • Add minced garlic and stir continuously until fragrant, about 1 minute
    • Add diced tomatoes with their juices to the pan, stir to combine
    • Pour in dry white wine, oregano, salt, and black pepper, stirring gently
    • Bring tomato mixture to a simmer and maintain at a gentle bubble for 8 minutes
    • Taste sauce, adjust seasoning with more salt or pepper if desired
    • Lower heat to low, gently nestle mullet fillets into the sauce, skin side up if skin-on
    • Cover the pan and poach fish gently, spooning sauce occasionally over fillets, until fish is opaque and flakes easily with a fork, about 8-10 minutes
    • While fish is poaching, chop fresh basil and grate Parmesan if not already prepared
    • Once fish is cooked, carefully transfer fillets to serving plates using a fish spatula
    • Stir chopped basil into the tomato sauce off-heat
    • Spoon generous amount of tomato-basil sauce over each mullet fillet
    • Garnish each portion with grated Parmesan cheese just before serving
    • Serve immediately with warmed plates for optimal temperature and presentation
    • Optional: Sprinkle a few additional fresh basil leaves or a drizzle of olive oil on top for enhanced aroma and color
    • Pair with a crisp side salad or steamed vegetables if desired, keeping accompaniments light to highlight the mullet and sauce
    • Present dish with sauce partially covering fish for visual contrast and texture exposure
