    Ingredients

    • 4 mullet fillets (about 6 ounces each)
    • 2 tablespoons olive oil
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 1 (14.5 ounce) can diced tomatoes, undrained
    • 1/4 cup dry white wine
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/4 teaspoon dried oregano
    • 1/4 cup chopped fresh basil
    • 1/4 cup grated Parmesan cheese

    Method

    • Heat the oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
    • Add the tomatoes, wine, salt, pepper and oregano. Simmer for 10 minutes.
    • Add the basil and Parmesan cheese, stirring to combine.
    • Add the mullet fillets to the sauce and simmer, covered, for 10 minutes or until the fish is cooked through.
    • Serve the fish with tomato-basil sauce. Enjoy!
