In a large bowl, combine the pollock fish, egg, onion, garlic, parsley, breadcrumbs, salt, and pepper. Mix until all ingredients are evenly combined.
Form the mixture into small balls.
Heat oil in a large skillet over medium-high heat.
Fry the fish balls in batches until golden brown, about 2-3 minutes per side.
Transfer to a plate lined with paper towels to absorb any excess oil.
