    Ingredients

    • 8 ounces prawns, peeled and deveined
    • 4 ounces dried Chinese egg noodles
    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 2 tablespoons fresh ginger, minced
    • 2 tablespoons soy sauce
    • 2 tablespoons rice wine vinegar
    • 1 tablespoon sesame oil
    • 2 tablespoons green onions, chopped
    • 2 tablespoons red bell pepper, diced
    • 2 tablespoons fresh cilantro, chopped
    • Salt and pepper to taste

    Method

    • Step-by-Step Method: Prawn Fried Noodles
    • Prepare a pot of salted water and bring to a boil for noodles.
    • While water heats, peel and devein prawns if not already done.
    • Rinse prawns under cold water and pat dry with paper towels.
    • Mince garlic and fresh ginger.
    • Dice red bell pepper.
    • Chop green onions and fresh cilantro.
    • Add dried egg noodles to boiling water and cook per package instructions until just tender; drain and set aside.
    • In a large wok or high-sided skillet, heat vegetable oil over medium-high heat.
    • Add minced garlic and ginger to the hot oil; stir-fry until fragrant, about 30 seconds.
    • Add diced red bell pepper and stir-fry for 1 minute until slightly softened.
    • Add prawns to the wok; season lightly with salt and pepper; stir-fry until they turn pink and opaque, about 2-3 minutes.
    • Push prawns and vegetables to one side of the wok.
    • Add drained noodles to the empty space in the wok.
    • Drizzle soy sauce, rice wine vinegar, and sesame oil over the noodles.
    • Toss everything together, mixing prawns, noodles, and vegetables until evenly coated and heated through, about 2 minutes.
    • Taste and adjust seasoning with salt and pepper as needed.
    • Remove from heat, plate noodles in bowls or on plates.
    • Garnish generously with chopped green onions and fresh cilantro.
    • Serve hot, optionally with additional soy sauce or chili flakes on the side.
