    Ingredients

    • 8 ounces prawns, peeled and deveined
    • 4 ounces dried Chinese egg noodles
    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 2 tablespoons fresh ginger, minced
    • 2 tablespoons soy sauce
    • 2 tablespoons rice wine vinegar
    • 1 tablespoon sesame oil
    • 2 tablespoons green onions, chopped
    • 2 tablespoons red bell pepper, diced
    • 2 tablespoons fresh cilantro, chopped
    • Salt and pepper to taste

    Method

    • Bring a large pot of salted water to a boil. Add the noodles and cook according to the package instructions. Drain and set aside.
    • Heat the oil in a wok or large skillet over medium-high heat. Add the prawns and cook until they are just cooked through, about 2 minutes.
    • Add the garlic, ginger, soy sauce, rice wine vinegar, and sesame oil and cook, stirring constantly, for 1 minute.
    • Add the cooked noodles, green onions, bell pepper, and cilantro and cook, stirring constantly, for 2 minutes.
    • Season with salt and pepper to taste.
