    • 1 lb. peeled and deveined prawns
    • 2 tablespoons vegetable oil

    • 1/2 red bell pepper, cut into strips
    • 1/2 green bell pepper, cut into strips
    • 1/2 cup snow peas
    • 2 tablespoons soy sauce
    • 2 tablespoons rice wine vinegar
    • 1 teaspoon sesame oil
    • 1 teaspoon sugar
    • Salt and pepper, to taste
    • 2 scallions, sliced
    • 1/4 cup cilantro leaves, chopped

    Method

    • Pat the peeled and deveined prawns dry with paper towels and set aside.
    • Slice the red bell pepper and green bell pepper into thin strips.
    • Chop the scallions and cilantro leaves, and set aside for garnishing.
    • In a small bowl, mix soy sauce, rice wine vinegar, sesame oil, and sugar to form the stir fry sauce.
    • Mince the garlic cloves and grate the fresh ginger.
    • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
    • Add prawns to the hot oil, season lightly with salt and pepper, and stir fry for 1-2 minutes until they start to turn pink.
