    Ingredients

    • 4 (6-ounce) red snapper fillets
    • 2 tablespoons olive oil
    • Salt and freshly ground black pepper
    • 1/2 cup fresh breadcrumbs
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh basil
    • 2 tablespoons chopped fresh chives
    • 2 tablespoons grated Parmesan cheese
    • 1 tablespoon freshly squeezed lemon juice
    • 1/4 teaspoon garlic powder
    • 2 tablespoons butter, melted

    Method

    • Preheat the oven to 350 degrees F. 
    • Grease a baking dish with olive oil. Place the snapper fillets in the dish and season with salt and pepper. 
    • In a medium bowl, mix together the breadcrumbs, parsley, basil, chives, Parmesan cheese, lemon juice, and garlic powder. 
    • Sprinkle the herbed breadcrumb mixture over the fish and then drizzle with melted butter. 
    • Bake for 20 minutes or until the fish is cooked through.
