    Ingredients

    • 4 red snapper fillets
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • 1/2 cup diced tomatoes
    • 2 tablespoons capers, drained
    • 2 tablespoons minced red onion
    • 1 tablespoon minced fresh parsley
    • 1 tablespoon freshly squeezed lemon juice
    • 1 teaspoon minced garlic

    Method

    • Step-by-Step Method: Red Snapper with Tomato-Caper Relish
    • Pat red snapper fillets dry with a paper towel
    • Season both sides of each fillet with salt and pepper
    • Drizzle 1 tablespoon olive oil over the fillets and rub oil evenly to coat
    • In a small bowl, combine diced tomatoes, capers, minced red onion, parsley, lemon juice, minced garlic, and remaining 1 tablespoon olive oil
    • Season the tomato-caper relish mixture with a pinch of salt and pepper; mix gently to combine
    • Set the relish aside to allow flavors to meld while preparing the fish
    • Heat a large non-stick skillet over medium-high heat
    • When the pan is hot, add the snapper fillets skin side down (if skin-on)
    • Cook fillets for 2-3 minutes per side, or until the flesh just turns opaque and flakes easily with a fork
    • Remove fillets from the pan and transfer to plates
    • Spoon the tomato-caper relish evenly over each fillet
    • Garnish with extra fresh parsley if desired
    • Serve immediately while the fish is hot and the relish is fresh
    • Suggested plating: place the fillet at the center of the plate; spoon the relish over the top; drizzle any juices around for color contrast
