The sardines are simply seasoned with chilli and lemon. They’re then placed on the grill and cooked until they’re flaky. A nice dry white wine will bring out the flavour of the fish. A great summer meal indeed!

    • 1 lemon, zested and juiced
    • Extra 2 lemons, cut into halves

    Method

    • Method for Sardines With Chilli, Garlic And Lemon
    • Rinse sardines thoroughly under cold water, pat completely dry with paper towels
    • Preheat grill to high or prepare a hot barbecue
    • In a small bowl, combine finely chopped red chilli, crushed garlic, lemon zest, lemon juice, and olive oil, mix well to form marinade
    • Place sardines in a shallow dish or tray, pour marinade evenly over them, ensuring all sides are coated
    • Allow sardines to marinate for 5–10 minutes at room temperature, turning occasionally to coat both sides
    • While sardines marinate, cut extra lemons into halves and reserve for grilling
    • Season marinated sardines lightly with salt if desired, being mindful of added sodium
    • Place sardines directly on the hot grill or barbecue, cook for 2–3 minutes per side until skin is crisp and fish is just cooked through
    • Place lemon halves cut-side down on grill for 2–3 minutes until charred and caramelized
    • Transfer grilled sardines to a serving platter, drizzle any remaining marinade over the top
    • Finish with a few drops of Tabasco over the sardines for extra heat, according to taste
    • Arrange grilled lemon halves alongside for squeezing at the table
    • Serve immediately with a side of lightly dressed salad greens or crusty bread if desired (not included in nutritional data)
    • For presentation, fan sardines over lemon slices, scatter with a touch of reserved fresh chilli or additional lemon zest for color
