  • Sardines With Chilli, Garlic And Lemon

    The sardines are simply seasoned with chilli and lemon. They’re then placed on the grill and cooked until they’re flaky. A nice dry white wine will bring out the flavour of the fish. A great summer meal indeed!

    Ingredients

    • 8 x 100g sardines, gutted
    • 1 lemon, zested and juiced
    • Extra 2 lemons, cut into halves
    • 1 red chilli, deseeded and finely chopped
    • 1 garlic clove, crushed
    • 2 tablespoon olive oil
    • Tabasco

    Method

    • Place the sardines on a grill pan and sprinkle with chilli, garlic and lemon juice and some salt and pepper.
    • Drizzle each sardine with olive oil. Put on the grill pan over a medium-high heat for 3 minutes each side or until cooked through and the flesh flakes away easily from the bone.
    • Place the lemon halves at the bottom of the grill pan and grill for the final 3 minutes of the cooking time.
    • Serve drizzled with the remaining lemon flesh and sprinkling with extra chilli, garlic and lemon.
    • Serving Suggestions: Serve with a few drops of Tabasco, and charred lemon halves plus a salad of Romaine lettuce or new potatoes.
