    Ingredients

    • 2 sea bass fillets
    • 2 tablespoons coconut oil
    • 1/2 cup diced onion
    • 1 tablespoon minced garlic
    • 1 tablespoon minced ginger
    • 1 teaspoon ground coriander
    • 1 teaspoon ground cumin
    • 1 teaspoon ground turmeric
    • 1 teaspoon curry powder
    • 1/2 teaspoon ground cardamom
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon cayenne pepper
    • 1/2 cup coconut milk
    • 1/4 cup vegetable broth
    • 2 tablespoons freshly squeezed lime juice
    • 2 tablespoons chopped fresh cilantro
    • Salt, to taste

    Method

    • To prepare Sea Bass with Coconut-Curry Sauce, begin by heating the coconut oil in a large skillet over medium-high heat.
    • Add the diced onion, minced garlic, and minced ginger and cook for 2-3 minutes, stirring occasionally.
    • Add the ground coriander, cumin, turmeric, curry powder, cardamom, cinnamon, black pepper, and cayenne pepper and cook for an additional 1-2 minutes.
    • Next, add the coconut milk and vegetable broth and bring the mixture to a simmer.
    • Add the sea bass fillets and cook for 8-10 minutes, flipping once halfway through. Once the fish is cooked through, please remove it from the skillet and set aside.
    • Add the freshly squeezed lime juice and chopped cilantro to the sauce and simmer for an additional 5 minutes. 
    • Taste the sauce and add salt to taste. Serve the sea bass fillets with the coconut-curry sauce, and enjoy!
