    Ingredients

    • 2 8-oz. skin-on sea bass fillets
    • 2 tablespoons olive oil
    • 2 tablespoons prepared pesto
    • Salt and freshly ground black pepper
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh parsley (optional)

    Method

    • Step-by-Step Method: Sea Bass with Pesto
    • Pat both sea bass fillets dry with paper towel
    • Season the flesh side of each fillet with salt and freshly ground black pepper
    • Brush skin side of each fillet lightly with 1 tablespoon olive oil (half the total)
    • Preheat a non-stick skillet or grill pan over medium-high heat
    • Add the remaining 1 tablespoon olive oil to the hot pan
    • Place sea bass fillets in pan, skin side down
    • Press down gently with spatula to maintain even contact
    • Cook 3-4 minutes until skin is crisp and fillets are mostly opaque
    • Flip fillets carefully
    • Cook second side 2-3 minutes until just cooked through
    • Remove pan from heat
    • Drizzle 1 tablespoon lemon juice over both fillets
    • Let fillets rest in pan for 1 minute to finish cooking gently
    • Plate fillets, skin side up, on warm plates
    • Spoon 1 tablespoon prepared pesto over each fillet
    • Drizzle each fillet with remaining 1 tablespoon lemon juice
    • Sprinkle with chopped fresh parsley (if using)
    • Optional: Garnish plate with additional lemon wedges and a drizzle of olive oil
    • Serve immediately with a side of your choice
