    • 1 sea bream, cleaned and gutted
    • 2 tablespoons olive oil
    • 1 lemon, cut into wedges
    • 2 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • 1 tablespoon fresh parsley, chopped
    • Salt and pepper, to taste
    • 1/4 cup white wine

    Method

    • Preheat your oven to 200°C (400°F), ensuring even heat distribution.
    • Pat the cleaned and gutted sea bream dry with paper towels, both inside and out.
    • Season the cavity and skin of the fish generously with salt and pepper.
    • Mix the minced garlic, dried oregano, dried thyme, and half of the chopped parsley in a small bowl.
    • Rub the mixed herbs and garlic inside the cavity of the sea bream and lightly over the skin.
    • Place the lemon wedges inside the cavity and arrange a few around the fish for flavor and moisture.
    • Drizzle the olive oil evenly over both sides of the sea bream to aid browning and flavor development.
    • Lay the sea bream on a parchment-lined baking tray or an oven-safe dish for easy handling.
    • Pour the white wine into the base of the dish to add aroma and moisture during baking.
    • Bake the sea bream in the preheated oven for 20-25 minutes, or until the flesh is opaque and flakes easily with a fork.
    • While the fish is baking, prepare your serving platter with fresh parsley and extra lemon wedges for garnish.
    • When done, carefully transfer the cooked sea bream to the serving platter using a wide spatula.
    • Spoon a little of the pan juices over the fish for added flavor and shine.
    • Sprinkle the remaining fresh parsley over the top for a burst of color and freshness.
