    Ingredients

    • 1 lb. raw shrimp, peeled and deveined
    • 3 tablespoons vegetable oil
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 1 red bell pepper, julienned
    • 1 cup broccoli florets
    • 1/2 cup carrots, julienned
    • 1/4 cup low-sodium soy sauce
    • 2 tablespoons rice vinegar
    • 1 teaspoon sesame oil
    • 1 teaspoon sugar
    • 1/2 teaspoon ground ginger
    • Salt and pepper, to taste
    • 1/4 cup chopped green onions

    Method

    • Step-by-Step: Shrimp Stir Fry
    • Prepare shrimp by rinsing under cold water and patting dry with paper towels
    • Dice onion, mince garlic, julienne red bell pepper and carrots, chop broccoli into florets, chop green onions
    • In a small bowl, whisk together low-sodium soy sauce, rice vinegar, sesame oil, sugar, and ground ginger
    • Heat 1 tablespoon vegetable oil in a large nonstick skillet or wok over medium-high heat
    • Add shrimp in a single layer and cook for 1–2 minutes per side until just pink; remove them from the pan and set aside
    • Add remaining vegetable oil to the pan, then add onion and garlic; stir-fry until onion softens and garlic is fragrant, about 1 minute
    • Add broccoli, carrots, and red bell pepper to the pan; stir-fry for 3–4 minutes until just tender but crisp
    • Pour sauce over vegetables and toss to coat evenly
    • Return cooked shrimp to the pan; stir-fry with vegetables and sauce for 1–2 minutes until heated through and well mixed
    • Season with salt and pepper to taste
    • Remove pan from heat and sprinkle chopped green onions on top for freshness and color
    • Plate stir fry onto a shallow bowl or plate to allow vibrant colors to show
    • Serve immediately, optionally with steamed brown rice or cauliflower rice on the side for increased fiber or lower carbs depending on dietary preference
    • For plating, arrange shrimp prominently on top of vegetables and scatter extra green onions for garnish
