    Ingredients

    • 1 lb. raw shrimp, peeled and deveined
    • 3 tablespoons vegetable oil
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 1 red bell pepper, julienned
    • 1 cup broccoli florets
    • 1/2 cup carrots, julienned
    • 1/4 cup low-sodium soy sauce
    • 2 tablespoons rice vinegar
    • 1 teaspoon sesame oil
    • 1 teaspoon sugar
    • 1/2 teaspoon ground ginger
    • Salt and pepper, to taste
    • 1/4 cup chopped green onions

    Method

    • To prepare Shrimp Stir Fry, start by peeling and deveining the shrimp.
    • Heat the oil in a large pan or wok over medium-high heat.
    • Add the onion and garlic and cook until fragrant, about 2 minutes.
    • Add the bell pepper, broccoli, and carrots, and cook for another 3-4 minutes.
    • Add the shrimp and cook until just pink, about 2 minutes. 
    • Add the soy sauce, rice vinegar, sesame oil, sugar, and ground ginger. Stir to combine and cook until the vegetables are tender and the shrimp is cooked through, about 3-4 minutes. Taste and season with salt and pepper, if desired. 
    • Serve with chopped green onions.
