To prepare Shrimp Stir Fry, start by peeling and deveining the shrimp.
Heat the oil in a large pan or wok over medium-high heat.
Add the onion and garlic and cook until fragrant, about 2 minutes.
Add the bell pepper, broccoli, and carrots, and cook for another 3-4 minutes.
Add the shrimp and cook until just pink, about 2 minutes.
Add the soy sauce, rice vinegar, sesame oil, sugar, and ground ginger. Stir to combine and cook until the vegetables are tender and the shrimp is cooked through, about 3-4 minutes. Taste and season with salt and pepper, if desired.
Serve with chopped green onions.
