    Ingredients

    • Soft shell crabs
    • Flour
    • Salt
    • Pepper
    • Egg
    • Milk
    • Oil for frying

    Method

    • Method for Making Soft Shell Crabs
    • Inspect crabs for freshness and pat each crab dry with paper towels
    • In a shallow dish, mix flour with salt and pepper to taste
    • In a separate bowl, whisk together egg and milk until well combined
    • Pour oil into a frying pan to cover the base by about half an inch
    • Set the pan over medium-high heat and allow the oil to come up to temperature (shimmering but not smoking)
    • Dredge each soft shell crab lightly in the seasoned flour, tapping off excess
    • Dip flour-dusted crabs in the egg and milk mixture, letting extra drip off
    • Return the crabs once more to the flour mixture for a second, light coating
    • Carefully slide each crab into the hot oil
    • Fry crabs for about 2 minutes per side, or until golden and crispy
    • Remove from oil and drain on paper towels
    • Plate individually on a warmed dish, add a pinch of salt if desired
    • Serve immediately, ideally with a wedge of lemon or simple salad on the side
