    • 1/2 lb thin egg noodles

    • 2 tablespoons soy sauce
    • 2 tablespoons oyster sauce
    • 1 teaspoon sesame oil
    • 1/2 teaspoon sugar
    • 1/4 teaspoon white pepper
    • 1/2 cup sliced bell peppers
    • 1/2 cup sliced onions
    • 1/2 cup sliced mushrooms
    • 2 tablespoons chopped fresh cilantro

    Method

    • Prepare a large pot of boiling water for the noodles.
    • Cook thin egg noodles until just al dente according to package instructions, then drain and set aside.
    • Pat cleaned squid rings dry with paper towels to remove surface moisture.
    • Slice bell peppers, onions, and mushrooms into uniform, thin strips or slices.
    • Mince the garlic and ginger; keep them separate from other vegetables.
    • In a small bowl, combine soy sauce, oyster sauce, sesame oil, sugar, and white pepper to make the stir fry sauce.
    • Heat 1 tablespoon of vegetable oil in a large wok or non-stick skillet over high heat.
    • Add sliced bell peppers, onions, and mushrooms to the wok. Stir fry for 2-3 minutes until just tender but still vibrant. Transfer the vegetables to a plate and set aside.
    • Add the remaining 1 tablespoon vegetable oil to the wok and bring back to high heat.
    • Add minced garlic and ginger. Stir fry for 20 seconds until fragrant, taking care not to burn.
    • Add squid rings to the wok and stir fry over high heat for 1-2 minutes until squid is just opaque and tender. Do not overcook.
    • Return the cooked vegetables to the wok with the squid.
    • Add the drained noodles to the wok.
    • Pour over the previously mixed stir fry sauce.
    • Toss everything together over high heat for 1-2 minutes, ensuring noodles, squid, and vegetables are evenly coated and heated through.
    • Taste and adjust seasoning if necessary.
    • Remove from heat immediately to prevent overcooking the squid and noodles.
    • Transfer to serving plates or a platter.
    • Scatter freshly chopped cilantro over the top for garnish just before serving.
    • Serve immediately, optionally with extra cilantro and a wedge of lime if desired for brightness.
