    Tiger prawns are loaded with flavour and texture. This dish is easy to prepare and quick, enough for a weeknight dinner.

    Ingredients

    • 900g tiger prawns
    • 20g red capsicum, diced
    • 40g green capsicum, diced
    • 20g yellow capsicum, diced
    • 30g garlic, finely chopped
    • 50g light soy sauce
    • 20g dark soy sauce
    • 30g sugar
    • Salt and pepper to taste

    Method

    • In a wok, heat the olive oil over high heat.
    • Add in the garlic and cook till fragrant.
    • Add in the capsicums and cook till there is a slight change of colour.
    • Add in the tiger prawns and cook for 2mins.
    • Add in soy sauce, sugar, salt and pepper.
    • Stir to combine & cook for another 1min.
    • Serving Suggestions: Serve over any hot rice, garnished with spring onion.
