    Tiger prawns are loaded with flavour and texture. This dish is easy to prepare and quick, enough for a weeknight dinner.

    Ingredients

    • 900g tiger prawns
    • 20g red capsicum, diced
    • 40g green capsicum, diced
    • 20g yellow capsicum, diced
    • 30g garlic, finely chopped
    • 50g light soy sauce
    • 20g dark soy sauce
    • 30g sugar
    • Salt and pepper to taste

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Serving Suggestions: Serve over any hot rice, garnished with spring onion.
