    Ingredients

    • 2 large tomatoes
    • 1 can (6 ounces) tuna, drained and flaked
    • 2 tablespoons mayonnaise
    • 2 tablespoons minced onion
    • 1 tablespoon chopped fresh parsley
    • 1 teaspoon lemon juice
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon garlic powder
    • Salt and pepper to taste
    • 2 tablespoons grated Parmesan cheese

    Method

    • Preheat the oven to 350°F.
    • Cut the top off of each tomato and scoop out the insides, leaving a hollow shell.
    • In a medium bowl, combine the tuna, mayonnaise, onion, parsley, lemon juice, oregano, garlic powder, salt, and pepper.
    • Stuff each tomato with the tuna mixture and place in a baking dish.
    • Sprinkle with the Parmesan cheese.
    • Bake for 20 minutes, or until the tomatoes are soft and the filling is cooked through.
