    Ingredients

    • 2 large tomatoes
    • 1 can (6 ounces) tuna, drained and flaked
    • 2 tablespoons mayonnaise
    • 2 tablespoons minced onion
    • 1 tablespoon chopped fresh parsley
    • 1 teaspoon lemon juice
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon garlic powder
    • Salt and pepper to taste
    • 2 tablespoons grated Parmesan cheese

    Method

    • Wash the tomatoes thoroughly under cold running water
    • Pat the tomatoes dry with a clean towel
    • Slice the very top off each tomato and set tops aside
    • Carefully scoop out the inside pulp and seeds from the tomatoes using a spoon, keeping the outer walls intact
    • Turn the hollowed tomatoes upside down on kitchen paper to drain excess juices
    • Open the can of tuna and fully drain the liquid
    • Place the drained, flaked tuna into a medium bowl
    • Add mayonnaise to the bowl with tuna
    • Add minced onion to the tuna mixture
    • Add chopped fresh parsley to the mixing bowl
    • Add lemon juice to the bowl
    • Sprinkle in the dried oregano
    • Add garlic powder
    • Season the tuna mixture with salt and pepper to taste
