    Ingredients

    • 500g baby squid
    • Spring onions
    • 1 red onion
    • 1 green chilli, deseed, chopped
    • Salt and crushed black pepper to taste
    • 1 teaspoon turmeric powder
    • 2 tablespoons lemon juice
    • Olive oil for stir-frying

    Method

    • Rinse the baby squid thoroughly under cold water and pat dry with kitchen towel
    • Slice the spring onions thinly and set aside
    • Peel and finely slice the red onion
    • Deseed and finely chop the green chilli
    • In a small bowl, combine turmeric powder, salt, and crushed black pepper
    • In a separate bowl, toss the cleaned baby squid with half the lemon juice
    • Heat a pan or wok over medium-high heat and add a small amount of olive oil
    • Once hot, add the sliced red onion and sauté for 1–2 minutes until starting to soften
    • Add the green chilli and cook for 30 seconds to release aroma
    • Add the baby squid to the pan and stir-fry briskly for 2–3 minutes until just opaque
    • Sprinkle the turmeric, salt, and pepper mixture over the squid, stirring well to coat evenly
    • Drizzle in the remaining lemon juice and toss again
    • Stir in the spring onions, cook for another 30 seconds, then remove from heat
    • Taste and adjust seasoning with extra salt or pepper as needed
    • Transfer to a serving dish, spreading squid evenly for visual appeal
    • Garnish with extra spring onion for color and freshness
    • Serve hot as a protein-rich appetiser or with salad for a light main
    • For plating, consider a chilled plate for contrast and a wedge of lemon on the side
