    Ingredients

    • 8 large eggs
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1/2 cup finely chopped onion
    • 2 cups whitebait, rinsed and drained
    • 1/2 cup finely chopped fresh dill
    • Salt and freshly ground black pepper, to taste
    • 1/4 cup freshly grated Parmesan cheese
    • 2 tablespoons butter, melted

    Method

    • Whitebait and Dill Frittata: Step-by-Step Method
    • Preheat oven to 180°C (356°F).
    • Crack all 8 eggs into a large mixing bowl.
    • Whisk eggs until yolks and whites are fully combined.
    • Add salt and freshly ground black pepper to the eggs; whisk briefly to mix.
    • Chop the fresh dill finely until you have 1/2 cup.
    • Grate 1/4 cup of Parmesan cheese and set aside.
    • Rinse the whitebait thoroughly under cold water and drain well.
    • Peel and finely mince the garlic cloves.
    • Peel and finely chop the onion until you have 1/2 cup.
    • Heat 2 tablespoons olive oil in a large ovenproof non-stick frying pan over medium heat.
    • Add chopped onion to the heated oil and sauté for 2 minutes until softened.
    • Add minced garlic to the pan and sauté for 1 minute until fragrant.
    • Add the well-drained whitebait to the pan and stir gently for 1–2 minutes.
    • Remove the pan from heat and let cool for 2 minutes.
    • Gently stir the dill and grated Parmesan into the cooled egg mixture.
    • Slowly pour the egg mixture into the pan over the whitebait, onion, and garlic.
    • Distribute the whitebait evenly in the pan with a spatula.
    • Drizzle the 2 tablespoons of melted butter evenly over the top.
    • Return pan to medium heat and cook undisturbed for 2 minutes to set the base.
    • Transfer the pan to the preheated oven and bake for 8–10 minutes until the frittata is just set and slightly golden on top.
    • Remove pan from the oven and let rest for 2 minutes before slicing.
    • To serve, slide the frittata out onto a warm serving plate and cut into wedges.
    • Garnish with extra dill sprigs, if desired.
    • Serve warm or at room temperature, optionally with a side of dressed salad greens and lemon wedges.
