    • Rinse the whitebait under cold running water and drain thoroughly
    • Pat the whitebait dry with paper towels to remove excess moisture
    • Grate the zucchini using a coarse grater
    • Place grated zucchini in a clean cloth or paper towel and squeeze firmly to remove as much liquid as possible
    • In a bowl, combine whitebait, grated zucchini, chopped parsley, chopped chives, salt, and pepper
    • In a separate bowl, lightly beat the egg
    • Add the beaten egg and plain flour to the whitebait and zucchini mixture
    • Stir gently until all ingredients are combined to form a loose batter
    • Heat olive oil and a thin layer of vegetable oil together in a nonstick frying pan over medium-high heat
    • When oil is shimmering, drop spoonfuls of the batter into the pan, flattening slightly with the back of the spoon
    • Fry fritters for 2–3 minutes on each side, or until golden and crisp
    • Transfer cooked fritters to a plate lined with paper towels to drain excess oil
    • Repeat with remaining batter, working in batches without crowding the pan
    • Serve fritters hot, garnished with extra chopped herbs if desired
    • Suggested plating: Arrange fritters stacked or slightly overlapping, with a small wedge of lemon on the side
