    • 1 cup whitebait
    • 1 cup grated zucchini
    • 2 tablespoons plain flour
    • 1 egg
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • 2 tablespoons chopped parsley
    • 2 tablespoons chopped chives
    • Vegetable oil for frying

    Method

    • To prepare Whitebait and Zucchini Fritters, begin by combining the whitebait and grated zucchini in a bowl. Add the flour, egg, olive oil, salt and pepper, and chopped herbs and mix until everything is combined.
    • Heat the vegetable oil in a pan over medium-high heat. Once the oil is hot, scoop out a spoonful of the mixture and shape it into a patty. Fry the patty for 2-3 minutes on each side until golden brown. 
    • Once cooked, transfer the fritter to a plate lined with paper towels to absorb any excess oil. 
    • Repeat the process until all the fritters are cooked.
