    Ingredients

    • 8 eggs
    • 1/2 cup of whitebait
    • 2 tablespoons of butter
    • 1/4 cup of chopped onion
    • 1/4 cup of chopped bell pepper
    • 2 tablespoons of chopped parsley
    • Salt and pepper to taste
    • 2 tablespoons of olive oil

    Method

    • Start by melting the butter in a large skillet over medium-high heat.
    • Add the onion and bell pepper and cook until they are softened.
    • Next, add the whitebait and cook for a few minutes.
    • Once the whitebait is cooked, add the eggs and scramble them together.
    • Add the parsley, salt, and pepper, and stir to combine. Reduce the heat to low and cook until the eggs are set.
    • Finally, drizzle the olive oil over the omelette and serve.
