    Soft Roes with Mustard on Toast

    This recipe can be made with Shad roes. In the spring, shad travel to the rivers of the East Coast, where they grow to become the largest members of the herring family. Like salmon, it has a juicy texture and is big, chunky, and meaty. The smooth consistency of the herring roe is exquisitely enhanced by the toast's crispiness, and a hint of heat from the mustard, making it the perfect starter or after-dinner treat.

    Ingredients

    • 1 package of herring milts/ soft roes (approximately 400g)
    • 2 teaspoons of mustard
    • 50g of butter
    • Just a pinch of salt

    Method

    • In a small saucepan, melt the butter, and add the mustard, and salt to taste.
    • After washing the melts, use a kitchen towel to wipe them dry. Be gentle!!
    • Put melts in butter and cook for five to ten minutes, according to how creamy you like them. You can add mustard and salt to your taste.
    • Toast with hot butter should be served with it.
