    Ingredients

    • 1 Dover sole, cleaned
    • 1/4 cup butter, melted
    • 1 clove garlic, minced
    • 1 tablespoon lemon juice
    • 1 teaspoon dried thyme
    • Salt and pepper to taste
    • 1/4 cup dry white wine
    • 1/4 cup bread crumbs
    • 2 tablespoons chopped fresh parsley
    • 1 tablespoon chopped fresh chives
    • Lemon wedges, for garnish

    Method

    • How to Make Baked Dover Sole
    • Preheat the oven to 190°C (375°F).
    • Pat the Dover sole dry with paper towels and season both sides with salt and pepper.
    • In a small bowl, mix the melted butter with minced garlic and lemon juice.
    • Place the Dover sole in a lightly greased baking dish.
    • Pour the butter, garlic, and lemon juice mixture evenly over the fish.
    • Sprinkle the dried thyme over the sole.
    • Pour the dry white wine around (not over) the fish in the baking dish.
    • In a separate bowl, mix the bread crumbs with chopped fresh parsley and chives.
    • Evenly sprinkle the bread crumb mixture over the top of the fish.
    • Bake the Dover sole in the preheated oven for 15-18 minutes, or until the fish flakes easily with a fork and the crumb topping is golden.
    • Use a fish spatula to carefully transfer the Dover sole to a warm serving platter.
    • Spoon some of the pan juices over the fish just before serving.
    • Garnish with lemon wedges and a sprinkle of extra fresh herbs.
    • Serve immediately with light vegetables or a simple salad.
