    Ingredients

    • 2 Barramundi fillets
    • 2 cloves garlic, minced
    • 2 tablespoons olive oil
    • 2 tablespoons fresh basil, chopped
    • Salt and pepper to taste
    • Lemon wedges for garnish (optional)

    Method

    • Step-by-step Method: Barramundi with Garlic and Basil
    • Pat both barramundi fillets dry with paper towels
    • Season both sides of each fillet lightly with salt and pepper
    • Mince the garlic cloves as finely as possible
    • Chop the fresh basil leaves and set aside
    • Place one tablespoon of olive oil in a non-stick skillet or frying pan
    • Heat the oil over medium-high heat until just shimmering
    • While oil is heating, check fillets for any pin bones and remove if necessary
    • Lay the seasoned fillets skin-side down in the hot oil
    • Cook undisturbed for approximately 2-3 minutes, until the skin is crisp and the fish turns opaque halfway up
    • Flip the fillets gently using a spatula
    • Scatter the minced garlic evenly around and on top of the fillets
    • Drizzle the remaining tablespoon of olive oil over the fillets in the pan
    • Continue cooking for another 2-3 minutes, until the fish flakes easily with a fork
    • In the last 30 seconds of cooking, sprinkle the chopped basil over the fillets and in the oil
    • Remove fillets from pan and transfer to serving plates immediately
    • Spoon pan juices, garlic, and basil over the top of the fillets
    • Serve immediately with optional lemon wedges for garnish
    • For plating, place fillets skin-side up if crisp, garnish with extra basil and lemon wedges beside the fish
