    A dose of Cajun seasoning brings awesome flavour to the tilapia with the sweet potato and the rest of the ingredients together for a smashing yet nutritious side dish.

    Ingredients

    • 4 whole tilapia, descaled, gutted, and cleaned
    • 900g sweet potatoes, diced
    • 1 red onion, sliced
    • 75g pecan nuts
    • 2 tablespoons maple syrup
    • 1 tablespoon olive oil
    • 2 tablespoons Cajun seasoning

    Method

    • Pre-heat oven to 170°C, or 350°F
    • Place sweet potatoes and onion on a baking tray, including the nuts, maple syrup, and Cajun seasoning.
    • The tilapia should have two slits on each side. Each fish should be sprinkled with one teaspoon of Cajun seasoning.
    • Place the tilapia on top of the sweet potatoes. Bake for 25-30 minutes or until the fish is cooked and the potatoes are tender.
    • Serving Suggestions: Serve with rice and vegetables of your choice.
