    Ingredients

    • 4 whole tilapia, descaled, gutted, and cleaned
    • 900g sweet potatoes, diced
    • 1 red onion, sliced
    • 75g pecan nuts
    • 2 tablespoons maple syrup
    • 1 tablespoon olive oil
    • 2 tablespoons Cajun seasoning

    Method

    • Step-by-Step Method: Cajun Roasted Tilapia with Sweet Potatoes
    • Preheat oven to 200°C (400°F), ensuring an even roasting environment.
    • Dice sweet potatoes into 2cm cubes and place them in a large mixing bowl.
    • Slice red onion thinly and add to the bowl with sweet potatoes.
    • Drizzle diced sweet potatoes and onion with 1 tablespoon olive oil; toss to coat evenly.
    • Sprinkle 1 tablespoon Cajun seasoning over sweet potatoes and onions; mix well for uniform flavor.
    • Spread sweet potatoes and onions in a single layer on a baking tray lined with parchment paper.
    • Roast sweet potatoes and onions for 15 minutes, allowing flavors to concentrate and caramelize.
    • While vegetables roast, pat tilapia dry with paper towel to ensure crisp skin during roasting.
    • Place cleaned tilapia on a separate lined oven tray or sheet.
    • Brush each tilapia with a thin layer of maple syrup (approximately half of total syrup provided).
    • Sprinkle remaining 1 tablespoon Cajun seasoning evenly over tilapia, coating both sides for bold flavor.
    • Arrange pecan nuts around sweet potatoes and onions on their tray (after first 15 minutes of roasting).
    • Return tray with vegetables and nuts to oven; add tilapia tray to oven as well.
    • Roast tilapia and vegetables for a further 20 minutes, until tilapia flesh is opaque and flakes easily, and sweet potatoes are golden.
    • In the last 5 minutes of roasting, drizzle remaining maple syrup over the pecans and vegetables to glaze and enhance caramelization.
    • Remove all trays from oven; let tilapia rest for 3 minutes to settle juices.
    • To serve, arrange roasted sweet potatoes, onions, and glazed pecans as a rustic bed on each plate.
    • Place one whole tilapia atop the vegetables for each serving.
    • Optionally, garnish with fresh herbs if available (not listed in ingredients).
    • Serve immediately while hot for optimal texture and flavor contrast.
