  • Cheesy Prawn Bake

    Put this prawn dish in the oven just before it's time to serve. This will keep the cheese gooey and warm for your guests.

    Ingredients

    • 8 prawns, butterflied
    • 2 tablespoons olive oil
    • 1 tablespoon garlic, chopped
    • 2 tablespoons grated parmesan cheese
    • 1/4 cup grated mozzarella cheese
    • 1/4 cup grated cheddar cheese
    • Salt and pepper, to taste
    • Green onion, finely chopped, for garnish

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Bake prawns for 5 minutes.
    • Dip in the flour and coat each fishcake. Dip in the egg and then coat with crumbs. Repeat this process until you have 24 fishcakes. Chill the fish cakes for one hour.
    • Sprinkle grated parmesan, mozzarella cheese and grated cheddar cheese over the prawns.
    • Put prawns back into the oven and bake for a further 5 minutes.
    • Serving Suggestions: Garnish prawns with some finely chopped green onion and serve with a leafy salad.
