    Cod with Garlic-Herb Butter is a simple yet flavorful dish perfect for a quick weeknight meal. This dish is made with fresh cod fillets topped with garlicky herb butter and perfectly cooked. The butter melts over the fish, adding a rich, savoury flavour. Serve with a simple side of steamed vegetables or a salad for a complete meal.

    Ingredients

    • 4 (6-ounce) cod fillets
    • 4 tablespoons butter, softened
    • 2 cloves garlic, minced
    • 2 tablespoons fresh parsley, chopped
    • 2 tablespoons fresh chives, chopped
    • 1 teaspoon fresh thyme, chopped
    • Salt and pepper, to taste
    • Lemon wedges, for serving (optional)

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Serve with lemon wedges, if desired.
