    Ingredients

    • 2 Dover Sole fillets
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • 2 tablespoons shallots, minced
    • 2 tablespoons white wine
    • 1/4 cup heavy cream
    • 1/4 cup mushrooms, sliced
    • 1/4 teaspoon fresh thyme leaves
    • Salt and pepper, to taste
    • 2 tablespoons fresh parsley, chopped

    Method

    • Heat the butter in a large skillet over medium heat.
    • Add the garlic and shallots and cook until fragrant, about 2 minutes.
    • Add the Dover Sole fillets and cook until golden brown, about 4 minutes per side.
    • Add the white wine and cook for an additional 2 minutes.
    • Add the heavy cream, mushrooms, and thyme leaves and cook until the sauce is thickened, about 5 minutes.
    • Season with salt and pepper to taste.
    • Serve with fresh parsley.
